Momma's Lunch is a new series that I'll be doing regularly and I'm super excited about it! Yummy little posts filled with quick meal ideas for the Mommas and Papas (and aunties or anyone) who have limited time to prepare meals (hello, nap-time). Hope you enjoy!

On medium, I sauteed some frozen peas and carrots with a bit of chopped onion and celery.
Chopped some frozen, pre-cooked chicken strips and a bit of garlic. I plunked into the pan and cooked it until the garlic was deliciously fragrant.
About a cup and a half of left over cooked quinoa from two nights ago. (You can use any type of left over grain, but quinoa is my favorite!) I stirred it into the chicken and veg and added about a teaspoonful of...
...butter.
I turned the stove off, added a little bit of Tamari (soy sauce) and a few grinds of pepper and mix it. I then realized that I forgot to scramble an egg before doing all of this. I blame it on the child, shrug my shoulders, dish my hot food (HOT FOOD, hell yeah!) into a bowl and top with sesame seeds.
All of this took about 10 minutes, including chopping a bit of onion and a clove of garlic.
Can I get a HELL YEAH for real food, fast?!

Oooh, I'll have to try this. Despite being gluten-free for a year I haven't yet tried quinoa but I've heard great things. Thanks for sharing, putting this in my recipe bookmarks :)

I think I'll be having this soon. What a great way to use a leftover grain. I usually just make a cold veggie salad.

Hell, I don't even HAVE limited time and I think this sounds fantastic!!! You should say this is for people with limited time AND ladies who are terrified of cooking - 'cause you make this sound easy peasy and yummy in the tummy and yeah. I'm done. ^_^
